Why We’re Building an Eco-Friendly Mobile Cafe
If you walk into almost any traditional coffee shop today, you’re greeted by the familiar, comforting hum of an espresso machine. But if you look a little closer, you might also notice something else: trash cans overflowing with single-use cups, pastry cases filled with items packed with hidden seed oils, and menus dominated by heavily refined & processed sugars.
When I envisioned Trouvaille Coffee Co., I asked myself a fundamental question:
Can a daily ritual give back to our bodies and the planet more than it takes?
The answer is a resounding yes.
Our mission is to redefine what "conscious coffee" means through integrity, sustainability, and flavor. To do that, I knew I had to build something entirely different from the ground up.
Here is the story behind why I am taking coffee culture on the road and how I'm doing it with a deep commitment to the environment, health, and bringing back "homemade".
THE VISION
Wholesome Sourcing: Knowing What’s in Your Food
I believe that you shouldn't need a degree in chemistry to understand the ingredient label on your morning pastry or latte. In a world full of heavily processed shortcuts, knowing exactly what goes into your body is vital for long-term health and gut wellness.
For us, transparency isn’t just a buzzword—it’s the company core value.
I am deeply committed to serving wholesome, nutrient-dense food made with complete ingredient purity. We will completely bypass the standard commercial supply chains to partner directly with local Washington State farms, beekeepers, and producers.
Sourced from the Neighborhood: Our signature drinks and baked goods are infused with real, local honey, eggs, and dairy.
Supporting Local Makers: By choosing regional partners and organic roasters, we ensure our ingredients are fresh, ethically produced, and supporting our local economy.
Radical Transparency: If you ever have a question about our alternative flours, natural sweeteners, or allergen-friendly practices, we will joyfully tell you the exact story behind every ingredient.
When you know where your food comes from, it changes how you experience it. Sourcing locally allows us to serve you food that is full of integrity and deeply connected to the beautiful Pacific Northwest ecosystem (my birthtown).

Because community and inclusion sit at the very heart of Trouvaille, we don’t want our trailer to just be a place where we sell things —we want it to be a platform that lifts up other local passion projects and small businesses just like you.
I have intentionally designed our trailer with custom, collapsible boutique shelves to showcase retail products from makers who share our vision. I am actively looking for local vendors with aligned brands to partner with!

The Mobile Blueprint: A Sustainable Oasis on Wheels
The heart of Trouvaille Coffee Co. is our beautifully designed coffee trailer. When designing our mobile setup, minimizing our environmental impact isn't a secondary thought—it is the blueprint. True sustainability requires looking at every single detail of how we operate, from the farm to your hand.
Here is how we are bringing that eco-friendly vision to life:
Natural Sweeteners, Zero Seed Oils, & NO SOY: Every latte, cold brew, and signature drink is naturally sweetened with local honey, dates, or maple syrup. You won't find a single drop of inflammatory seed oils or refined white sugar in our kitchen.
100% Compostable Packaging: From the lid to the cup to the straw, everything we hand you is fully compostable.
Waste & Carbon Reduction: We operate with low-waste water systems and prioritize regional sourcing to keep our delivery routes short and efficient. We also partner with local composting programs to ensure our coffee grounds go back into enriching Washington's soil, not a landfill.
Radically Clean: Our Gluten-Free & Raw Vegan Standards
True sustainability also extends to how we nourish our bodies. Too often, "allergy-conscious" products on the market are wolves in disguise. Many mainstream gluten-free products are highly processed, stuffed with dozens of synthetic binders, gums, artificial preservatives, and chemical stabilizers—things that are inflammatory, tough on the gut, and packed with hidden carcinogens.
We refuse to take those shortcuts.
Our menu will feature a dedicated line of gluten-free as well as some allergy-conscious options built strictly from whole, clean foods. Furthermore, any vegan options offered will be crafted using RAW, unadulterated ingredients. You will never find a paragraph-long chemical ingredient list on our food. Instead, we use simple, real food foundations like raw nuts, seeds, coconut, dates, and pure cold-pressed elements. We believe that plant-based options should be alive, nutrient-dense, and completely free of toxic additives. If it doesn't serve your long-term vitality, it doesn't get past our window.
Why Mobile? Choosing Community Over Concrete
When entrepreneurs dream of starting a coffee company, they usually picture a fixed storefront with brick-and-mortar walls. While I love a cozy café, I deliberately chose a mobile model for a specific reason: accessibility and direct human connection.
A traditional building is stationary. It asks the community to always come to it. A mobile cafe flips that script. It allows us to bring conscious coffee culture directly to the places where life is already happening—local farmers’ markets, artisan fairs, sustainability events, weddings, and neighborhood pop-ups.
Mobility gives us the unique privilege of connecting with diverse pockets of our community. One day we are fueling local creatives and busy professionals; the next, we are providing a safe, allergen-friendly treat to a parent whose child has dietary sensitivities. We get to meet you where you are, swap stories, and build a hyper-local network of people who care about mindful living.
A "Lucky Find" Worth Sharing
In French, Trouvaille means a lucky find or a chance discovery of something beautiful.
We want our mobile trailer to be that exact moment of joy in your day—a lucky find on your morning commute or weekend market stroll where you don’t have to compromise your health or your values for convenience.
